Product Watch

Boca burgers...made with soy and found in the frozen foods section.  You can either microwave them or cook in a skillet that has been coated with non-stick spray.  They are very good served on Hungry Girl Flatout folding buns.

Chicken Parmesan

Ingredients:
6, boneless, skinless chicken breasts
1 1/2 C. fiber one cereal
1 jar light-no sugar added, Ragu spaghetti sauce
1/4 C. egg substitute
salt and pepper
Italian seasoning
reduced fat Parmesan cheese
non-stick spray

Directions:
Blend cereal in blender until fine.  Place cereal onto large plate.  Pour egg substitute into pie plate.  Spray baking dish with non-stick spray.  Coat chicken breasts, one at a time, with the egg substitute and then the cereal.  Place chicken into baking dish.  Spoon spaghetti sauce over chicken pieces.  I only used about a 1/4 of the jar.  Sprinkle with salt, pepper and Italian seasoning.  Then top with Parmesan cheese.  Bake at 375 degrees for 40 minutes.  I served this with baked veggies and potatoes. ( sweet and russet ) For the potatoes, cube and peel sweet and russet potatoes.  Place on cookie sheet that has been sprayed with non-stick spray.  Sprinkle potatoes with black pepper and season salt.  Bake at 375 for 40 minutes.

Apricot Chicken and Salmon

Ingredients:
6, skinless boneless chicken breasts or 6, 4 ounce portions of salmon
1 C. sugar free apricot jam
2 tsp. minced garlic
1 T. olive oil
1/4 tsp. ground cinnamon
Directions:
Place chicken or salmon, in baking dish. Sprinkle with salt and pepper.

In small mixing bowl, mix together jam, garlic, olive oil and cinnamon.  Mix until well blended.  Spoon mixture over chicken or salmon. Bake chicken at 375 degrees for 40 minutes.  The salmon cooks for about 30 minutes at 375.  I served this with brown rice and baked veggies.

Chicken and Broccoli Alfredo

Makes 4 servings~
Ingredients:
1/2 of a 1 lb. package of whole wheat linguine
1 C. fresh or frozen broccoli florets
non-stick spray
4, skinless, boneless chicken breasts, cubed
1 can 98% fat free cream of mushroom soup
1/2 C. milk ( I used a cup...it was a little thick with just the 1/2 C.)
1/2 C. reduced calorie Parmesan cheese
1/4 tsp. black pepper
Directions:
Spray skillet with non-stick spray.  Heat skillet to medium high heat and add chicken pieces.  Cook until well browned and cooked through, stirring often.
Prepare linguine according to package directions.  Add broccoli during last four minutes of cooking time.  Drain linguine mixture in colander.  
In mixing bowl, mix together soup, milk, cheese and black pepper.  Transfer mixture to skillet.  Mix well with chicken pieces and then add linguine mixture. Cook until mixture is bubbly and hot.  Serve with additional Parmesan cheese.  I served this with a whole wheat roll.  You could add additional veggies to this and that would be really good as well.

Oven "Fried" Chicken

Ingredients:
8, boneless, skinless chicken breasts
salt, pepper and garlic powder
non-stick spray
1/2 C. lite mayo.
1 t. lemon juice
2 egg whites
3 C. corn flakes
Directions:
Spray baking dish with non-stick spray.  Sprinkle chicken with salt, pepper and garlic powder.  Combine mayo., lemon juice and egg whites in bowl and set aside.  Place corn flakes in large ziplock bag.  Using rolling pin, crush corn flakes until they are crumbs.  Place corn flake crumbs into another bowl.  Dip chicken in bowl with mayo. mixture, then dip chicken into crumbs.  Place chicken in baking dish. Spray top of chicken with non-stick spray and bake at 375 degrees for 40 min.  I served this with mashed potatoes, gravy, squash and green beans.
Potatoes:
Peel and cube 6 large potatoes, then place in large pan with hot water and minced garlic.  Boil until tender.  Drain and add about 2 T. olive oil, salt and pepper to taste, and about 3/4 C. almond silk soy milk. Beat together until creamy.
Gravy:
2 cans of 98% fat free cream of chicken soup
1 T. lemon juice
black pepper
1 C. fat free sour cream
Blend together and microwave in large bowl for about 4 minutes.
Veggies:
Spray cookie sheet with non-stick spray.  Place green beans on one side, squash on the other.  Top with mushrooms, onions and fresh cilantro.  Spray with non-stick spray, sprinkle with pepper and season salt.  Bake at 375 degrees for 40 min.

Crockpot Creamy Chicken and Veggies

Ingredients:
4 pounds of skinless, boneless, chicken breasts, cut into serving size pieces.
1 t. salt
1/4 t. pepper
2 T. olive oil
2 pounds of small red potatoes, cut into halves
1, 16 ounce package of baby carrots
1 onion, chopped
3 cloves garlic, minced
14 ounce can of low sodium chicken broth
1 C. fat free sour cream
3 T. dijon mustard
3 T. honey
3 T. whole wheat flour
1 t. dried thyme leaves
Directions:
Sprinkle chicken with salt and pepper.  Heat olive oil in large skillet and brown chicken.
Place potatoes, carrots, onion and garlic in bottom of slow cooker.  Top with chicken.  Pour chicken broth over the top.  Cover crockpot and cook on low for 5 hours, until chicken is thoroughly cooked and veggies are tender.  
In small bowl, stir together sour cream, mustard, honey, flour and thyme until well blended.  Stir mixture into crockpot and turn heat to high.  Cook for 15-20 minutes, stirring occasionally, until thickened.  Makes 8 servings.
I served this with green beans and squash.

Bob Harper did what?!

On occasion, I visit Bob Harper's Facebook page.  For those of you who don't know who Bob Harper is, ( MOM! ) He is one of the trainers off of, "The Biggest Loser".  A lot of us who have had success with weight loss, post our pictures on his page.  Every few days, he will re-post the picture with a caption, which usually says, "Need Motivation?".  Well, yesterday afternoon I logged onto Facebook and was hit with 28 friend requests and private messages.  I thought, "What the hell is going on?".  I had a couple friends post on my Timeline that Bob had posted my picture!  I was SO thrilled to know that he took the time to post it.  I am overwhelmed with all of the kind words and compliments from others.  Many of the messages brought tears to my eyes.  People asking me how I lost the weight, if I'd be willing to help them, that they have so much to lose that it seems impossible.  I am here to tell all of you that your goals ARE obtainable.  If someone would have told me a couple of years ago that I would lose 139 lbs. and be 11 lbs. from goal, and that Bob Harper would be sharing my picture on Facebook, I would have laughed!!  I want all of you to know that you CAN do this.  A big, "THANK YOU" to Bob!! And to all the wonderful people who have contacted me,  I will help you in anyway that I can...=)

Oven Baked Pork Chops

Ingredients:
4, boneless, lean pork chops
1 can 98% fat free cream of mushroom soup
carrots
onion
mushrooms
salt and pepper
worcestershire sauce
non-stick spray

Coat skillet with non-stick spray.  Sprinkle pork chops with salt and pepper.  Place in skillet and cook until browned on both sides.  Place in baking dish.  Place carrots, onions and mushrooms over the top.  Sprinkle with salt and pepper.  In small bowl, whisk together the soup and 1/2 can of water.  Pour over pork chops and veggies.  Splash worcestershire sauce over the top.  Cover with tinfoil and bake at 375 degrees for 1 1/2 hours.  I served this over brown rice with baked green beans and squash.
